Katie's Best Banana Bread Ever


We previously shared Katie's recipe for Xylitol Chocolate Walnut Torte. Now we're bringing you her recipe for the "Best Banana Bread Ever!" 

Once again, Katie made her recipe healthier by using Dr. John's® xylitol from birch in place of sugar. Xylitol has the same sweetness as sugar, so you simply swap it out at a 1:1 ratio.


Ingredients:
4 very ripe bananas
1/2 cup Xylitol
1/4 c. melted, salted butter (slightly cooled)
1 egg
1 t. salt
1 t. baking soda
1.5 cup flour
Optional: 1/2 cup chopped walnuts and/or 1/2 cup chocolate chips

Directions:
1. In a large bowl, beat together the bananas, Xylitol, cooled butter, egg, salt and baking soda.
2. Gradually add in the flour. Fold in nuts or chocolate chips, if desired.
3. Pour batter into lightly greased loaf pan and bake at 325* for 45 minutes or until a toothpick comes out of the center clean.
